| Single varietal sparkling cider made from all Newtown Pippin heirloom apples from two orchards - the 5 Mile orchard in Corralitos in the Parajo Valley, and Larsen Apple Barn in Camino, where there is a long history of growing this apple. Wild fermented to complete dryness in neutral red wine barrels. Bottle conditioned, with a small amount of fresh juice added during bottling for natural carbonation. Unfiltered, unpasteurized.
