One of the most exciting new breweries in Japan is Koueigiku in Saga Prefecture. Two sake industry outsiders were able to partner with one of the most talented young brewers in Japan, Katsuaki Yamamoto, and started brewing Koueigiku in 2019. Previously Yamamoto was known for his work brewing the highly regarded Kikutaka brand from Aichi. While his previous brewing style focused on big-bodied, deep, savory sakes, the goal with Koueigiku is to produce bright, energetic, slightly lower ABV, absolutely crushable sakes. Their sakes strike an impeccable balance of sweetness, acidity, and umami with a youthful energy and refreshing spritz.
