Finding sparkling wine that tastes like this, from grapes that are farmed biodynamically, made by real people at an entry level price point is next to impossible. When we first tasted this wine we were blown away, and assumed it would land at around $50 on our shelf. Luckily we were wrong and now this beautiful wine is in your club pack. When people hear rose sparkling wine they assume sweet, yet this wine is bone dry with no dosage (sugar added) and has a good amount of weight and interest to it. Vignerons Martina & Andreas Schachenhuber began this project in 2019 with the idea to only make sparkling wines. A fool's errand in the sense that really great sparkling wines are hard to produce and are time consuming especially when done solely by hand as they do. When they started their journey they had no tractor, no cellar; just a dream. Little by little they have done everything they set out to do making 3 sparkling wines:, two roses and one white. The grapes are all biodynamic and are from dry farmed vineyards which lends to a more concentrated flavor that you’ll find with one sip of this wine. None of the wines are filtered and they have just a small amount of sulfur added before bottling to preserve freshness. The use of the Zweigelt grape, a grape you’ll find all over Austria seems to be a great choice for this more serious pet nat. The grape tends to have lots of wild berry flavors, we get salted raspberry and a little pepper which we pick out of this wine as white pepper. The perfect wine to stand up to hearty dishes or to drink on its own at aperitivo hour.
Recommended Pairings: A wine like this is great for fatty foods because the bubbles and acidity wash your palate clean for the next sip offering a refreshing break between bites. Grilled Salmon steak with asparagus, fresh goat cheese with strawberries and crostini, curries or sagg with warm naan and other spicy dishes that act as a palate cleanser from chili beans to Szechuan.
