2018 Clandestin 'Les Semblables Boréal' Champagne

Champagne Clandestin was founded by Meursault-trained Benoit Doussot in Buxières-sur-Arce. Benoit focuses on small, out-of-the-way parcels and expositions that many winemakers overlook or ignore. The vineyards are grown on Kimmeridgean and Portlandian limestone soils and are farmed organically. All the fruit (Pinot Noir and Chardonnay) is harvested by hand. Benoit's wines display exquisite minerality, cut and precision. Champagne Clandestin's Les Semblables Boreal Brut Nature is 100% Pinot Noir grown on vines of 20-35 years of age. It is fermented and aged in French oak barrels before aging sur latte for 15 months before disgorging with zero dosage. There are beautiful aromas of wild strawberries, brioche and toast. Delicate flavors of crunchy, red berry fruit blend with intense mineral freshness and are buoyed by a fine mousse of tiny bubbles. The finish is bone dry and crisp with a delectable savory note. A delightful way to start the evening, though this can be enjoyed with seafood, especially lobster, or a wild mushroom risotto.”
