2022 Domaine in Black 'Evolution D'Octobre' Pinot Noir/Pinot Gris Coferment

From a 40 year old parcel of vines. Mostly direct pressed pinot gris, with pinot gris and pinot noir co-fermented as whole bunches making up the balance. Elevage in vats. Tart red fruit and blood orange bitterness.

Winemaker Lambert Spielmann's winery is located in the village of Saint Pierre in Alsace, France. He's been certified organic since 1997 and also works with biodynamics principles on his two hectares of vineyards. No fining, filtration or additions in any of the wines.
